I had made this pizza back when Drew had left me (ha, that sounds like he left left me/our marriage. What I MEAN by that is he had already moved back to Michigan and I was still living in PA and making all the food with no one to share it with).

I’m fairly certain that was the same weekend I must have made my scones, as well as a couple other recipes that I’m not remembering at the moment . But what I do remember is that I felt like I had so much food in my fridge that weekend, and I thought I’d try to pawn some of it off on my coworkers. So that’s what I did with this pizza. Plus, sometimes with making so many different types of foods at one time, I feel like I sometimes lose sense of when something is actually good! Does anyone else (food bloggers or not) feel like that? That happened with this pizza. I had a piece (or two for good measure…) and thought “Oh yeah, it’s good… but will others like it? Ugh, Drew isn’t here to give me his (very) honest opinion. For all I know this could taste like sh*t and I’m about to share it with the world…” << again, thoughts. So I turned to my coworkers during a meeting over lunch one day. Turns out the pizza was good. In fact, they loved it and I wrote down the recipe for them right there!

Ingredients needed for Thai naan pizza

  • naan flatbread
  • red curry paste
  • tomato paste
  • thinly sliced red pepper
  • grated carrots
  • chopped onion
  • nutritional yeast
  • cilantro garnish (optional)

My goal for this pizza was to make it super EASY, hence the title, right? I had some ingredients I needed to use up and I based this recipe around that. I had curry paste in my fridge, some tomato paste in my freezer (sometimes I only use 1/2 a can of tomato paste for a recipe. So I will scoop out the rest of it and freeze it in a plastic baggie to use again later. No waste here!), as well as some naan hiding in the back of my freezer! Plus I was curious about the nutritional yeast* in my pantry and wondered how it would go on this pizza.

Turns out if was pretty freakin’ awesome and I definitely recommend it.

I think I look at this Easy Vegan Thai Naan Pizza as more of an appetizer. What do you think? You could definitely cut it into thinner strips if you wanted to prepare it for a party. Or it would go nicely with a thai salad to make a great lunch!

Did I mention this was easy? Especially when you’ve prepped your veggies ahead of time. I mean, hello this pizza can be ready in less than 20 minutes!! What’s not to love?

Ingredients

  • 2 naan flatbreads
  • 2 TBS red curry paste
  • 3 TBS tomato paste
  • chopped red onion
  • thinly sliced red bell pepper
  • grated carrots
  • nutritional yeast
  • cilantro

Instructions

  1. Preheat oven to 350F and place naan on baking sheet. Set aside.
  2. In small bowl, mix together red curry paste and tomato paste. Using a rubber spatula or spoon, evenly distribute sauce on naan. Top with onion, bell pepper, grated carrots, and nutritional yeast. Garnish with cilantro if desired.
  3. Bake pizzas for 15-20 minutes, or until naan has crisped up.
  4. Allow pizzas to cool for 5 minutes before slicing and serving, enjoy!

Notes

-Store leftovers in airtight container in fridge about 5 days, or tightly wrapped in freezer up to 1 month. Allow to thaw at room temperature before heating in microwave or in oven again.

      Aw that is great though! My dad is not too picky really. I think he will try anything, I made him some healthy Asian lettuce wraps the other night and he loved them!

      Hi Margie, yes naan typically does have dairy, but there are several vegan recipe out there too! Here is a recipe I found for vegan-friendly naan . Hope that helps!

    nutritional yeast What’s this? I’m looking at making this dish but we’re not vegan we’re cutting down meat and it looks lush but what’s this yeast do?

      The nutritional yeast just adds a unique flavor. DAiry-free or vegan recipes often call for it for a somewhat “cheesy” taste, though it really depends on how you use it. I would give it a shot if you can find it! It’s great on baked kale chips and roasted veggies too!
